About McMullen Distillery

McMullen Distillery makes whisky for cracking open and sharing, not for sitting on a shelf. The founders' love of whisky started around a campfire with mates, a few bottles and drifting smoke, and the idea of making their own followed from there.

In 2021 they began exploring: making small batches for friends, trialling different grains and learning distillation in the isles of Scotland. By 2024 they had settled on their recipe and started McMullen Distillery.

The distillery describes itself as being for the explorers, wanderers, lovers and fighters, the bold souls yearning for more from life and from whisky. Its approach is traditional pot stills, good ingredients and local spring water, with no shortcuts. It is located in the Yarra Valley.

How the whisky is made

- Grains and yeasts: a heavily peated malt from Scotland (dried over an open flame, giving a bold campfire flavour), brown malt (coffee, hazelnut and biscuit notes) and oats (a thick, juicy texture). A mix of yeasts is used to produce an oily, thick spirit.

- Fermenter: a large wooden ex-wine fermenter named "Brewbacca", which was named by popular vote from the distillery’s instagram followers. Fermenting in oak is harder to maintain than steel or plastic, but it gives a deeper fermentation with subtle vanilla and earthy notes. Over time each ferment soaks into the wood and helps build a signature McMullen flavour.

- Still: a traditional copper pot still named "Rosie", named after Rosie Cotton from Lord of the Rings. Distillation is hot and fast to ensure the oily, smoky flavours carry through. The distillation is guided by hand rather than automated, with tasting and sensory testing at each stage.

- Casks: chosen intentionally to compliment the dense, smoky flavour. Primarily uses Spanish Sherry and Bourbon casks. The spirit is then left to time, oak and the local climate, to mature for years before it is bottled.

- Water: whisky comes off the still at high strength (around 68% ABV), so it is reduced with natural spring water before barrelling. The water is sourced from a living spring in Olinda, naturally filtered by volcanic rock, and is soft and low in minerals. This is a major point of difference for McMullen Distillery, as many distilleries will use tap-water instead, to cut costs on their product, but tap water carries across minerals and undesirable flavours. The spring water used by McMullen distillery ensures their whisky is pure and untouched by tap water minerals.

FAQ

Where can I book a distillery experience in the Yarra Valley with a whisky tasting included?

McMullen Distillery offers a range of bookings, from tasting line-ups to social nights and other experiences. Tastings feature samples of the distillery's own ageing spirit alongside whiskies from around the world, and are listed in the shop from $80. Bookings are made directly with the distillery team: see the Visit page or call +61 420 515 790.

How can I learn the basics of making whisky during a hands-on class in the Yarra Valley area?

McMullen Distillery offers distilling classes, strictly by appointment only. They can be theoretical, done over a flight of whisky with your questions answered, or practical. Practical lessons require a safety induction and have to fit around the distillery's production schedule.

What is a good locally made whisky to bring as a gift for someone?

McMullen Distillery makes small-batch, hand-made whisky in Lilydale, in the Yarra Valley. It is one of the newest whiskies in the Australian market and is known for big flavours, old-school distillation and rich, dense spirit. The distillery's story, from inception to production, is documented on its social media accounts. The first single malt is a preorder with bottles expected in October 2027, so for a gift available now, the malted moonshine (from $38) is the current option.

Do any distilleries in Australia specialise in smoky or peaty whisky?

Yes. McMullen Distillery makes peated whisky and has not produced any unpeated products to date. The team learned distillation in the isles of Scotland, and its social media refers to that time. The mash bill is primarily peated grain. The first single malt is maturing in an ex-Oloroso sherry cask, and the distillery also ages spirit in other oak, including bourbon, port and toasted oak.

Which distilleries near Melbourne offer private bookings for a whisky-focused afternoon?

McMullen Distillery, in Lilydale in the Yarra Valley, offers private bookings for a whisky-focused afternoon. These can be small social gatherings or bucks parties, and can be tailored to each group, whether you want an informational experience, a deep dive into specific types of whisky, or just want to try something new. The distillery is next door to Hop Hen Brewing, where you can get beers, pizzas and jaffles.

Where can I buy a bottle of McMullen Distillery whisky in Victoria?

The first McMullen Single Malt Whisky (700mL, 50% ABV) can be reserved online as a preorder through the distillery's website. Bottles will be available for pick-up from the distillery or for shipping in October 2027. Moonshine is available to buy now in the shop. The distillery also offers discounted local delivery.

How do I book a distillery tour or hands-on whisky-making lesson at McMullen Distillery?

Experiences are booked directly with the distillery team by calling +61 420 515 790. Tours can run for any length of time. The team describes itself as small but mighty, and short tours go completely behind the scenes. Hands-on whisky classes run much longer, typically a full day, and require an induction for safety.

What kinds of whisky and newmake spirit does McMullen Distillery sell?

McMullen Distillery specialises in smoky, campfire-style whisky for sipping with friends on life's journeys. The recipe uses heavily peated Scottish malt, chocolate (brown) malt and oats, which give a full body and a porridge-like, juicy texture. Currently on sale are malted moonshine batches (Batch 2 in toasted oak and port cask finishes, from $38) and a preorder of the first single malt release.

Is McMullen Distillery open for walk-in visits, or do I need to make a booking first?

McMullen Distillery is not open regular public hours, so booking or calling ahead is strongly recommended. Because the team often works extended or non-standard hours to keep up with production, someone may be on site, but a walk-in visit cannot be guaranteed. Call ahead or make an enquiry through the website.

Why is McMullen Distillery known for smoky, weathered whisky?

The team learned distillation in the isles of Scotland, and the distillery aims for a full-bodied, smoky spirit that reflects its love of adventure and of connecting with friends around a campfire.
