Making whisky, doing paperwork, and trying to manage Laura. Loves a Lagavulin 16, or anything from Adelphi.

Keeps us focused on our mission, and supports whisky production. She’ll usually take something Irish - maybe a Greenspot.

Visual and creative lead. Sensory and tasting assistant. Has a borderline unhealthy obsession with Glendronach.

Laura brings a (very) fresh perspective to things. Distilled milk, anyone? With a side of banana rusks, of course.

Manages rowdy guests and the local bug population. Likes chewing on corks. Has never actually tried whisky.

Rosie
OUR POT STILL
The star of the show. Modelled after the ancient stills of Islay, Rosie’s the driving force behind each bottle.
Our love for whisky started the way all good stories do - over a table in the backyard, surrounded by mates… and a few bottles of whisky. Somewhere between the banter, cheese platters, and campfire smoke, a thought kept coming up… we should make our own whisky!
In 2021 we bought our first still. For three years we tinkered - small batches for mates, trialing different yeasts and grains, even heading to Scotland to learn from the masters.
By 2024, we were honing in on a flavor we loved. A rich, smoky, juicy whisky - something you could sink your teeth into. But we couldn’t make enough on our small still to share it.
The path forked ahead of us. To the left was the easy option. We keep making little batches, and we go on wondering what could have been. To the right was a distillery. Yes, we’d need a bigger still, a factory, and literal mountains of paperwork… but we’d be able to live out the dream. Making good whisky, and sharing it with great people.
We chose the adventure.
At McMullen, we’re making whisky the way it should be made – in a traditional copper still, with hand-milled grains, pure spring water, and a whole lot of patience. You can learn all about our process here.
We’re not doing it alone though. Our community - you - are part of the journey. Through conversations, newsletters, and social media, we’re capturing your ideas and producing batches with you, not just for you.
