Our whisky is made with a mix of Heavily Peated and Chocolate Barley, which gives it a smokey, hazelnut flavor. We also use oats, which make the spirit dense and juicy. Those oils give it a long finish, with flavors like porridge, banana, chocolate, and smoke sticking around long after you’ve sipped. This is our first cask - an ex-Oloroso barrel from the Andalucía region of Southern Spain. Over the next two years, this wine-soaked barrel will add flavors like balsamic, raisin, and dried fruits to our whisky. We’re really excited about this one.
At 50% ABV and 700mL, this is a gorgeous drop.

Why do you have to wait two years? One of the things that makes whisky special is the flavor and color it pulls from a barrel - which takes time. In Australia, our new-make becomes ‘whisky’ after 2 years in the barrel.
